Spinach and Feta stuffed Butternut

For all the vegetarians this one is for you!

For the meat-lovers, please go wild and add chopped up organic bacon to the mix

Serves 2 people

2 butternuts/ 3 gem squashed

1-2 bags of chopped washed spinach

a generous heaping of crumbled organic feta cheese

Herb salt


(bacon optional)

You can also add chopped olives


Slice your butternuts in half and remove the pips.

Combine the spianch and feta and season well.

Scoop the spinach mix into the hollowed butternut.

Place in a roast dish and cover with the lid


Roast in the oven for about 30-40mins.

Add extra cheese towards the end for super melted yumminess
