Thai Green Curry in a hurry

  • 500g beef/ chicken strips
  • 300ml coconut milk
  • 125ml vegetable stock
  • 3 tsp thai green curry paste (I make my own) see below
  • carrot sliced thin
    sugar snap peas
    broccoli
    mushrooms
    fresh coriander
    salt and pepper

Thai green curry paste:

1 tsp lemon juice and zest

4 spring onions

1 fresh chillie chopped and deseeded

1 clove garlic

1 thumb sized piece of fresh ginger grated

1 tsp coriander seeds/fresh coriander

3 Tbls soy sauce

1 Tbls fish sauce

Blend together with a stick blender

 

Cook the beef until browned
Add the green curry paste
Add the coconut milk and veg stock and simmer for 5 mins
Add the veg and some fresh coriander

Serve with cauli rice and fresh coriander
